Chicken is one of my favorite meat. There are so many ways to prepare it. Sometimes, though, I don’t feel like making a big to-do in terms of clean-up. So here is an easy recipe for roasting chicken that requires only one pot.

Follow these 7 steps and you will have a great meal tonight without the great mess.

Directions:

Step 1:  Peel and cut your potatoes
Step 2:  Peel, cut and prepare other root vegetables of your choice
Step 3:  Gather your favorite seasonings and a bit of olive oil to make a wet rub
Step 4:  Rub it all over your chicken
Step 5:  Place the chicken in a roasting pan and arrange the vegetables around it
Step 6:  Add half a cup of water to yoru pan to help capture juices for gravy or sauce
Step 7:  Cover with lid and place in oven that has been pre-heated to 375 degrees F.

Roast the chicken to an internal temperature of 165F, basting every half hour. Remove lid in last hour for crispier skin.

Let the roast chicken sit for a few minutes then serve and enjoy.
