Every province has its owned specialty.
In Mindanao, it is a spicy chicken soup called halang-halang. This is Visayan term for “spicy hot.” Here is how to make this special chicken soup.
Ingredients Needed:
1 kilo chicken cut into serving pieces
1/2 head garlic, chopped
3 thumb size ginger, cut into strips
1 medium size onion, chopped
1 small size papaya, cut into wedges
5 pcs red chili pepper
1-2 stalk lemon grass
3 cups water
1/4 cup patis or fish sauce
2 tbsp cooking oil
Salt and ground pepper to taste
Directions:
In a wok, heat the cooking oil, sauté the garlic, onion and ginger. Put in the chicken and add the fish sauce, simmer for 3 to 5 minutes.
Add lemon grass, red chili pepper and 3 cups of water. Bring to boil and simmer for 10-15 minutes or until chicken is tender. Then add papaya and cook for another 3 to 5 minutes or until papaya is cooked. Put in salt and pepper to add taste. Simmer for 2 to 3 minutes. Remove from heat.
Best serve while it’s hot with plain rice. Enjoy!
