Ingredients Needed:
5 pcs eggplant
3 pcs tomatoes sliced into small cubes
3 pcs onion diced into small cubes
4 tbsp grated ginger
5 tbsp vinegar
Salt and ground pepper to taste
Water for boiling
Directions:
In a pan, boil the eggplant until it turns light brown. Remove from heat and let it cool. Peel the eggplant and smash it.
In a bowl, combine all the ingredients and the peeled eggplant. Mix well until all the ingredients are blended. Add salt and ground pepper to taste and mix.
