... Needed:
½ kilo pork or beef, cut into chunk
1 small can corned beef
1 ½ cups tomato sauce
2 onions sliced
5 cloves garlic minced
1 medium sized green bell pepper, cut into cubes
2 tbsp cooking oil
1 pc beef broth cube
2 cups water
2 tbsp of sugar
2 bay leaves
Cheese spread or grated cheese
Salt and ground black pepper to taste
Directions:
Saute garlic and onion in hot cooking oil. Put in the meat and saute for 2 to 3 minutes. Add the corned beef, simmer for a while. Pour water, bay leaves and the beef broth cubes, let it boil for 5 to 8 minutes. Add the tomato sauce and green bell pepper. Simmer over a low heat until the meat is completely cooked. Add sugar, salt and pepper to taste. Stir to blend the taste and simmer for a minute. Remove from heat. Best serve with cheese spread on top.

½ kilo scallops cleaned
2 onions sliced
5 cloves garlic chopped
3 pcs long green chili sliced
3 pcs red chili pepper sliced
3 bay leaves
2 cups coconut milk
1 cup of water
3 tbsp cooking oil
Salt and ground pepper to taste
Directions:
Heat the cooking oil, sauté onion and garlic. Add the scallops and sauté together. Add water and bay leaves, boil for 3 to 5 minutes. Pour the coconut milk, simmer for another 3 to 5 minutes over low heat. Put in the chilies and let it boil until the scallops are tender. Add salt and ground pepper to taste, mix. Simmer for a minute.

½ kilo pork heart cleaned
½ kilo pork lungs cleaned
1 head garlic minced
1 onion minced
1 thumb ginger minced
2 medium sized radish cut into small cubes
3 bay leaves
1 tsp peppercorn
5 tbsp of water (soak the annatto seeds)
½ cup vinegar
2 tbsp cooking oil
5 pcs green or red chili pepper
Water for boiling
Fish sauce to taste
Directions:
Boil the pork lungs and pork heart for 45 minutes to 1 hour or until it tender. Use pressure cooker to save time. Let it cool. Cut the lungs and heart into small cubes, must be the same cut for radish. Set aside.
In separate casserole, boil again the small cubes lungs and heart with 2 cups of water. Pour the vinegar and put in the bay leaves. Let it boil for 10 to 15 minutes over a medium fire. Strain and set aside.
In a pan, heat cooking oil to sauté the onion, garlic and ginger until it turns to light brown. Put in the boiled pork lungs and heart. Add radish, simmer for 3 to 5 minutes. Add water from the soak annatto seeds; stir to blend the color in the ingredients. Add the green or red chili pepper, peppercorn and fish sauce to taste. 1 small can pineapple tidbits
Salt to taste
Directions:
Prepare the cleaned whole chicken. Add salt inside the chicken. Stuff chicken with lemon grass. Set aside.

2 1/2 gallons water
2 carrots
2 celery
1 onion
1/2 tbsp parsley
1/2 tbsp thyme
3 bay leaves
1 orange
1 lemon
1 cup kosher salt
This will brine a 10-12 pound turkey.
Directions:
Add water and roughly chopped vegetable to a stock pot. Squeeze the citrus fruits as you add them to the pot. Add the seasonings. Add the kosher salt.
Bring mixture to boil on high heat, but don’t let it simmer. Remove from heat as soon as it starts to boil.
Remove all the fruits, vegetables and bay leaves.
