Red Pinakbet Recipe

...  Needed: ½ kilo pork belly, cut into bite size 5 pcs string beans cut into two inches long 1 cup squash cubed 4 pcs okra sliced 1 pc of medium bitter melon sliced 2 pcs eggplant sliced 5 cloves garlic minced 2 pcs onions sliced 2 pcs tomatoes sliced 5 tbsp cooked shrimp paste (bagoong) 1 cup water 2 tbsp cooking oil 1 cup of tomato ketchup or tomato paste 1 pack of pork rind (chitcharon) Salt and ground pepper to taste Directions: Saute garlic, onion and tomatoes. Put in the pork belly and stir fry until cooked. Add the shrimp paste and simmer for 2 to 3 minutes. Put in the okra, squash, eggplant and bitter melon; simmer for 3 to 5 minutes over a low heat. Pour the water and let it boil. Add the string beans and put in the tomato ketchup, carefully mix all the ingredients. Add salt and pepper to taste. Cover and simmer for another 3 to 5 minutes. ...  Needed: ½ any fresh fish, fried ¼ kilo squash cut into cubes 1 bundle okra or lady finger sliced 1 bundle of string beans sliced 1 pc small bitter melon sliced 1 pc of egg plant sliced 1 cup of malunggay (moringa) leaves 2 onions sliced 2 pcs tomatoes, sliced 3 tbsp of patis or fish sauce 2 to 3 cups water 1 pc fish broth cube Salt to taste Directions: In a casserole, boil water with onion and tomatoes. Add the squash, okra, bitter melon and string beans. Simmer for a minute. Put in the egg plant and add the fish broth cube. Boil for 2 to 3 minutes. To add more taste, add fish sauce and salt. ...  Needed: 1pc large size ampalaya or bitter melon slice 2 pcs tomatoes slice 2 pcs onion slice 3 pcs eggs 2 tbsp cooking oil Salt to taste Direction: Soak the sliced ampalaya (bitter melon) in a bowl with water and salt for 5 to 10 minutes to avoid too much bitterness. Then drain. In a frying pan, put cooking oil then sauté the onion and tomatoes. Add the sliced ampalaya and cover in low heat for 3 to 5 minutes.
