...  but here’s something a little different. Try this wonderful recipe for a Strawberry Forest Cake for a delicious alternative. Ingredients Needed: One 8” inch chocolate, completely cooled. 3 cups stabilized whipped cream Strawberry pie/cake filling Fresh strawberries for decorating Plain milk or dark chocolate, for making shavings   Directions:  Bake the cake, according to recipe directions and allow it to cool completely. Then, slice into 2 or 3 layers. You can use a knife or a cake leveler. You can also use a thread to make nice neat layers. All you do is cut a long thread, wrap it around the cake and pull the ends around the opposite way, slicing through the cake. You’ll need about 3 cups of stabilized whipped cream. You can use my recipe that uses meringue powder or you can also stabilize whipped cream with cornstarch, gelatin or piping gel. Cover the bottom layer of your cake with whipped cream. Then, for the gold color, start with white icing. Add yellow coloring gel and then double the amount of brown coloring gel to get a golden color. It’s not shiny like gold, but it does the trick. Frost Your Cake Now you can do the basic icing for the cake. Sliced the cake in half to make 2 layers. You can do this very easily by using a cake leveler. If you don’t have one, using a knife or thread will do. Next, put a big dollop of the yellow icing on the bottom layer, making sure not to go right to the edge. You don’t want the yellow icing to mix with the black icing you are going to add to the outside. Now you can put your top layer on the cake and start icing it with the black icing. It will make it easier to decorate your cake and make it last longer, while still looking beautiful. Chinese Cake Assembly There is really no right or wrong way to assemble this cake because it’s going to be delicious no matter what, but here is our suggestion. To start with, cut your cake twice to create 3 layers. You can use a knife, thread or a cake leveler…whichever is your tool of choice. The idea is to get 3 layers that are as even as possible. Bottom Layer: Mousse and fruit. In the picture below, we’re using chocolate mousse and we topped it with fruit. Next Layer:  Custard and Fruit.
