While preparing dinner, take a cue from the witches in William Shakespeare’s MacBeth by repeating, “Double, double toil and trouble; Fire burn, and cauldron bubble.” Continue by saying something like “Eye of newt, and wing of bat . . .” as you place your Bat Wings on the table. Obviously you don’t want to feed your family Bat Wings. However, you can make a pretty good fake Bat Wing by using chicken wings. This appetizer can be as tame, creepy speaking, as you like or you can ramp it up and make it spookier, too. Note, these will be messy if you use the food coloring. If you leave it out, the wings won’t be as black…but neither will be your family’s mouths and fingers. Ingredients Needed: 1/4 cup oyster sauce 1/4 cup brown sugar 1/4 cup black bean sauce 1 cup soy sauce 1 tablespoon black gel food coloring (optional) 20 whole chicken wings with the tips intact Directions: Start the sauce for the Bat Wings by combining all of the ingredients except the chicken wings in a medium bowl. Whisk these together until they are well-combined. Separate 1/3 of the sauce mixture and set it aside. Put all of the chicken wings into a large (at least gallon size or larger) plastic zip top bag. ...  Needed: 1 kilo chicken, cut into serving pieces 2 onions sliced 1 head garlic minced 2 pcs medium red bell pepper, sliced 1 medium can Evaporated milk 2 cups drained pineapple tidbits 2 cups fresh pineapple juice 2 tbsp cooking oil Salt and ground pepper to taste Directions: In a wok, saute garlic and onion in cooking oil for a minute. Put in the chicken and simmer for 3 to 5 minutes. Pour the pineapple juice and let it boil. Add the evaporated milk and simmer for 8 to 10 minutes over medium heat. ...  Needed: 1 kilo chicken cut into serving pieces 2 onions chopped 5 cloves garlic chopped 3 medium sized potatoes cut into cubes 2 medium sized carrots cut into cubes 1 thumb ginger cut into strips 2 tbsp curry powder 2 cups thick coconut milk 1 cup water 3 tbsp fish sauce 1 medium sized red bell pepper cut into cubes 1 tbsp ground pepper 1 tbsp cooking oil Directions: In a large pan, saute the garlic and onion. Put in the chicken and stir fry for 3 to 5 minutes. Add the curry powder; simmer for 2 to 3 minutes over a low fire. Add the potatoes and carrots. Pour water and let it boil for a minute. Add the thick coconut milk and boil for 5 to 10 minutes or until the ingredients are tender. Add the fish sauce, pepper and red bell pepper to taste, stir carefully. Simmer for a while.
