Chickentin Recipe (Stewed Whole Chicken)

...  Needed: 1 whole chicken cleaned 2 bundles lemon grass 1 liter sprite soda or 7 up 5 tbsp of brown sugar 2 tbsp peppercorn 3 bay leaves 1 thumb ginger chopped 5 cloves garlic chopped 2 onions chopped 1 small can pineapple tidbits Salt to taste Directions: Prepare the cleaned whole chicken. Add salt inside the chicken. Stuff chicken with lemon grass. Set aside. In a big casserole, mix all ingredients except the pineapple tidbits and put in the chicken. Cook over a low heat for 30 to 45 minutes or cook until chicken is tender. Simmer until the sauce thickens. Take note, don’t cook the Chickentin over medium heat it will make the sauce bitter. Halang-halang Recipe (Spicy Chicken Soup)

...  province has its owned specialty. In Mindanao, it is a spicy chicken soup called halang-halang.  This is Visayan term for “spicy hot.”  Here is how to make this special chicken soup. Ingredients Needed: 1 kilo chicken cut into serving pieces 1/2 head garlic, chopped 3 thumb size ginger, cut into strips 1 medium size onion, chopped 1 small size papaya, cut into wedges 5 pcs red chili pepper 1-2 stalk lemon grass 3 cups water 1/4 cup patis or fish sauce 2 tbsp cooking oil Salt and ground pepper to taste Directions: In a wok, heat the cooking oil, sauté the garlic, onion and ginger. Put in the chicken and add the fish sauce, simmer for 3 to 5 minutes. Add lemon grass, red chili pepper and 3 cups of water. Bring to boil and simmer for 10-15 minutes or until chicken is tender. Then add papaya and cook for another 3 to 5 minutes or until papaya is cooked. Put in salt and pepper to add taste. Simmer for 2 to 3 minutes. Remove from heat. ...  Needed: 6 whole chickens cleaned Melted butter 6 bundles lemon grass For marinade: 5 tbsp dried rosemary 1 cup water 3 tbsp calamansi juice Salt and pepper to taste   Directions: In a big bowl, pour in the water, pepper, soy sauce and calamansi juice. Marinade the whole chicken for 3 to 4 hours. Set aside. After marinating, rub the melted butter on to the skin of chicken. Sprinkle the dried rosemary on top. Let stand for 3 to 5 minutes. Stuff the chicken cavity with lemon grass. Place the chicken in the Turbo cooker. Set it at 190 degrees Celsius or 375 degrees Fahrenheit and wait for 40 to 45 minutes. And it’s ready. ...  Needed: 1 kilo of medium size tulingan or skipjack tuna sliced into two pcs 2 pcs green chili finger 1 thumb of ginger chopped 1 head of garlic chopped 2 pcs of onion sliced 1 bundle of tanglad or lemon grass ½ cup of vinegar 1 cup of coconut milk Salt and pepper balls to taste Directions: In the wok or pan, place the skipjack tuna, green chili finger, garlic, onion, ginger, lemon grass and pour the vinegar. Simmer for 3 to 5 minutes on low heat. Add the coconut milk, put in salt and pepper to taste. Boil for 5 to 8 minutes until the coconut milk becomes creamy. Remove from heat.
