5 tbsp cane vinegar
2 tbsp white sugar
2 pcs tomatoes sliced
2 onions sliced
3 tbsp calamansi juice
Water for boiling
Salt and ground pepper to taste
Directions:
Boil water, blanch the potato leaves. Stay the potato leaves in boiling water for 20 to 30 seconds. Drain the leaves and submerge in a bowl with cold water. Strain and let it dry, set aside.
In a bowl, mix all the ingredients (vinegar, sugar, calamansi juice, salt and pepper). Add the boiled leaves, tomatoes and onion, mix together to blend the taste. Place in a serving plate. Serve as an appetizer or with fried fish.

½ kilo medium sized fresh tilapia or any fish
3 cups coconut milk
2 bundles pechay (bok choy)
3 tbsp cooking oil
2 onions sliced
5 cloves garlic chopped
1 thumb ginger strips
2 pcs long green chili pepper
Salt and ground pepper to taste
Directions:
Saute garlic, ginger and onion in cooking oil. Pour the coconut milk; simmer for 3 to 5 minutes. Put in the fish and the vegetable. Boil for 3 to 5 minutes in medium fire. Add salt and pepper to taste. Put in the green chili and simmer for a while. Remove from heat. Serve with rice.

½ kilo kabalyas or any fresh fish
1 bundle pechay (bok choy)
1 onion chopped
3 pcs tomatoes quartered
5 cups of water
¼ cup calamansi juice
5 tbsp of fish sauce
5 pcs red chili pepper chopped
Salt to taste
Directions:
In a casserole with water, put in the tomatoes and onion. Let it boil for 3 to 5 minutes. Add the calamansi juice and fish sauce. Put in the fresh fish and red chili. Add the pechay and salt to add more taste. Simmer for 2 to 3 minutes.
Serve while it’s hot with rice.

4 hard boiled native eggs
¼ kilo ground pork
2 pcs beaten eggs
1 cup all purpose flour
1 onion chopped
5 cloves garlic chopped
2 medium sized potatoes cut into cubes
1 large sized carrot cut into cubes
1 tbsp chili powder
Salt and ground pepper to taste
2 cups cooking oil
For Gravy Sauce:
1 pc chicken cube
¼ bar butter
2 cups water
3 tbsp all-purpose flour
Ground pepper to taste
Directions:
Mix ground pork, onion, garlic, beaten eggs, all-purpose flour, chili powder, salt and ground pepper in a bowl. Mix thoroughly to blend the taste. Roll the mixed ingredients into the boiled eggs until the eggs cover completely.
In a separate bowl, season the carrots and potatoes with salt and ground pepper to taste. Let stand for 3 to 5 minutes. Dip with all-purpose flour.

1 kilo chicken cut into serving pieces
2 onions chopped
5 cloves garlic chopped
3 medium sized potatoes cut into cubes
2 medium sized carrots cut into cubes
1 thumb ginger cut into strips
2 tbsp curry powder
2 cups thick coconut milk
1 cup water
3 tbsp fish sauce
1 medium sized red bell pepper cut into cubes
1 tbsp ground pepper
1 tbsp cooking oil
Directions:
In a large pan, saute the garlic and onion. Put in the chicken and stir fry for 3 to 5 minutes. Add the curry powder; simmer for 2 to 3 minutes over a low fire. Add the potatoes and carrots. Pour water and let it boil for a minute. Add the thick coconut milk and boil for 5 to 10 minutes or until the ingredients are tender. Add the fish sauce, pepper and red bell pepper to taste, stir carefully. Simmer for a while. Best serve while it’s hot with rice.

Ingredients Needed:
2 medium size whole fish, cleaned, gutted and scaled
1 head garlic minced
3 onions minced
1 thumbs ginger minced
5 pcs tomatoes chopped
Salt and ground pepper to taste
Charcoal for grilling
Directions:
Prepare the clean whole fish. Pinch salt to taste. Set aside for 3 to 5 minutes.
In a bowl, mix all the spices ingredients. Add salt and pepper to taste. Stuff the mixed spices into the fish cavity.
Grill the fish for 5 to 10 minute each side or until both sides are cooked.
Transfer in a serving plate. Best serve with soymansi, the combination of soy sauce and calamansi juice with chili pepper.
