... Needed:
½ kilo medium fresh shelled shrimps (set aside the head for boiling)
4 pcs large tomatoes quartered
1 onion sliced
5 cloves garlic minced
1 thumb garlic minced
2 tbsp spring onion chopped
4 pcs green chili pepper sliced
1 cup tomato sauce
1 tbsp white sugar
2 cup water
Cooking oil
Salt and ground pepper to taste
Directions:
In a pot, boil the shrimp head for 3 to 5 minutes. Drain and set aside the shrimp stock.

Ingredients Needed:
½ kilo pig’s face (pig’s ear and cheeks)
4 pcs extra firm tofu
4 pcs green chili pepper sliced
¼ cup soy sauce
3 tbsp cane vinegar
1 tsp sugar
Onion spring chopped
Calamansi juice
Water for boiling
Cooking oil
Salt and ground pepper to taste
Directions:
Boil water and put in the pig’s face. Add salt and pepper. Let it boil for 20 to 30 minutes or until tender. Use pressure cooker to save time. Remove from heat. Let it cool. Cut into bite size. Set aside.
In a frying pan, deep fry the tofu until it turns to golden brown, remove from heat. Cut into cubes. Set aside.
In the same pan, deep fry the sliced pig’s face until it turns to light brown and crispy. Set aside.
In a separate bowl, combine sugar, soy sauce and vinegar. Mix well until the taste will blend.
Place tofu and pig’s face in the same bowl. Put in the chopped spring onions, chili pepper and calamansi juice. Pour the combine sauce and mix well.

Ingredients Needed:
2 cups all purpose cream
1 cup fresh milk
¼ butter bar
2 onions chopped
5 cloves garlic crushed
1 cup water
1 pc shrimp broth cube
¼ kilo shrimp, peeled and deveined
¼ bay scallops cooked
¼ kilo fish fillet cut into cubes
¼ kilo calamari cut into small rings
1 bundle spring onions, sliced
Salt and ground pepper to taste
Directions:
Melt the butter, saute onions and garlic. Pour water and all purpose cream. Add the shrimp broth cubes, stir occasionally. Put in the shrimp, calamari, fish and scallops. Simmer for 2 to 3 minutes. Add the fresh milk and spring onions. Put in salt and pepper to taste. Stir, let it boil for another 2 to 3 minutes or until soup will be thicken and creamier. Best serve while it’s hot.

Ingredients Needed:
½ kilo boneless chicken breast meat, cut into bit size
5 cloves garlic chopped
2 onions sliced
1 bundle spring onions sliced
1 cup all purpose cream
½ cup water
5 tbsp butter
Salt and ground pepper to taste
Directions:
In a pan, melt the butter over a low heat. Saute garlic and onion. Put in the bite sized chicken and stir fry together. Pour the water and let it boil for a while. Add the spring onions and put in the all purpose cream, simmer for 3 to 5 minutes until sauce thickens. Add salt and pepper to taste. Simmer for another minute and stir occasionally. Remove from heat. Best serve with steamed rice.

10 raw beaten eggs
3 cup steamed rice
4 tbsp ketchup
¼ kilo ground pork
1 bundle spring onion chopped
1 white onion sliced
2 tbsp grated cheese
Salt and ground pepper to taste
Cooking oil
Directions:
Heat cooking oil and saute the ground pork for 6 to 8 minutes over low heat. Add onion. Put in the steamed rice and ketchup; stir to mix all the ingredients. Add the grated cheese and spring onion, stir occasionally. Add salt and pepper to taste, mix well. Remove from heat and set aside.
Heat skillet and put enough cooking oil for the omelet. Quickly spread the egg and make a big round omelet. Place the seasoned rice in the middle of omelet and fold the other side to cover the seasoned rice. Remove from heat. 1 cup cooking oil
4 tbsp oyster sauce
1/4 cup water
1 tbsp garlic crushed
2 tbsp spring onion minced
Salt and ground black pepper to taste
Directions:
In a plate, season the sliced tofu with a pinch of salt and ground black pepper. Let it stand for 3 to 5 minutes.
In a frying pan, heat the cooking oil and deep fry the tofu until it turns to light brown and crispy. Remove from heat. Place into paper towel to absorb excess oil. Set aside.
