Chicken Adobo in Coconut Milk (Adobo sa Gata)

...  adobo is a very popular Filipino dish. Most people make it with vinegar. This recipe adds a little twist by adding coconut milk.   Ingredients Needed: 1 pc of medium size chicken cleaned (adobo cut) 1 head garlic chopped 2 pcs onion chopped 2 tbsp cooking oil 3 bay leaf or laurel 5 tbsp of brown sugar 5 tbsp of soy sauce 1 ½ cup of coconut milk 1 tbsp pepper powder 15 pcs hard boiled quail eggs 3 pcs potatoes quarter sliced 1 cup of water Directions: In a pan, heat the oil then sauté the garlic and onion. Put in the chicken and add water, simmer for 5 to 10 minutes. Add the coconut milk, bay leaf and potatoes. Add sugar and soy sauce. Boil for 10 to 15 minutes. Add pepper to taste.
