... Needed:
½ kilo medium fresh shelled shrimps (set aside the head for boiling)
4 pcs large tomatoes quartered
1 onion sliced
5 cloves garlic minced
1 thumb garlic minced
2 tbsp spring onion chopped
4 pcs green chili pepper sliced
1 cup tomato sauce
1 tbsp white sugar
2 cup water
Cooking oil
Salt and ground pepper to taste
Directions:
In a pot, boil the shrimp head for 3 to 5 minutes. Drain and set aside the shrimp stock.
In a sauce pan, heat the cooking oil. Put in the garlic, ginger, onion and tomatoes until fragrant. Pour the shrimp stock and let it boil for 3 to 5 minutes. Add the tomato sauce, green chili pepper and sugar, stir. Put in the fresh shelled shrimp and spring onions. Simmer for another 3 to 5 minutes. Add salt and pepper to taste and boil for a minute. Remove from heat. Best serve while it’s hot with steamed rice.

... Needed:
½ kilo fresh shrimp shelled
½ kilo fresh squid cut into rings
1 kilo fresh mussels cleaned, boiled and shell on
½ kilo any fresh fish fillet, cut into cubes
½ bar butter
1 cup evaporated milk
½ cup all purpose cream
3 pcs potatoes quartered
4 pcs tomatoes quartered
2 onions minced
5 cloves garlic minced
2 cups mussels stock
2 stalks celery minced
1 tbsp dried oregano leaves
Salt and ground black pepper to taste
Directions:
In a pot, melt the butter over a low heat. Saute garlic and onions for 2 to 3 minutes. Add the shrimp, squid and mussels, simmer for a while. Pour the mussels stock and let it boil. Add the potatoes and tomatoes. Put in the milk and all purpose cream. Let it boil for 3 to 5 minutes, stir occasionally. Put in the fish and simmer for another 2 to 3 minutes. Add the dried oregano and celery to add flavor. Put in salt and pepper to taste. Carefully mix all the ingredients to blend the taste. Simmer for a while. Best serve with any toasted bread.

4 pcs of butterfly cut dried fish or daing
7 pcs tomatoes sliced in small cubes
2 onions sliced
¼ bar butter
Cooking oil for frying
Ground black pepper to taste
Directions:
Fried the daing or dried fish, Set aside.
In a sauce pan, melt the butter. Saute onions and tomatoes over a low heat. Smash the tomatoes in butter. Add ground pepper to taste. Put in the fried dried fish. Cook for 3 to 5 minutes. Best serve with steam rice.

2 bunch choy sum, sliced in small pieces
2 tbsp cooking oil
1 tbsp fish sauce
¼ kilo ground pork
2 onions sliced
3 pcs tomatoes sliced
5 cloves garlic minced
½ cup of water
Salt and ground pepper to taste
Directions:
In a pan, heat the cooking oil. Stir fry the ground pork until it will turn to light brown or until it cook. Set aside.
In the same pan, sauté garlic, onion and tomatoes. Add the Choy sum and simmer for 2 to 3 minutes. Add water and let it boil for 3 to 5 minutes. Put in the ground pork and mix. Add the seasonings to taste. Simmer for a minute. Best serve with steam rice and fried fish.

5 pcs extra firm tofu
1 pc medium carrot, strips
1 bundle green bean, sliced
2 onions sliced
5 cloves garlic chopped
2 pcs tomatoes sliced
5 tbsp oyster sauce
Salt and ground pepper to taste
Cooking oil for frying
Directions:
In a container, place your tofu and season with salt and pepper to taste for 3 to 5 minutes. Deep fry the tofu until it turns to golden brown. After frying, cut it into cubes. Set aside.
In a sauce pan, heat the oil. Saute garlic, tomatoes and onion, add the veggie, stir. Put in the oyster sauce. Simmer for a minute. Add the fried tofu, stir carefully. Place in a serving bowl.

2 bunch Talbos(sweet potato leaves), stems removed and cleaned
5 tbsp cane vinegar
2 tbsp white sugar
2 pcs tomatoes sliced
2 onions sliced
3 tbsp calamansi juice
Water for boiling
Salt and ground pepper to taste
Directions:
Boil water, blanch the potato leaves. Stay the potato leaves in boiling water for 20 to 30 seconds. Drain the leaves and submerge in a bowl with cold water. Strain and let it dry, set aside.
In a bowl, mix all the ingredients (vinegar, sugar, calamansi juice, salt and pepper). Add the boiled leaves, tomatoes and onion, mix together to blend the taste. Place in a serving plate. Serve as an appetizer or with fried fish.
