...  Needed: ½ kilo pork heart cleaned ½ kilo pork lungs cleaned 1 head garlic minced 1 onion minced 1 thumb ginger minced 2 medium sized radish cut into small cubes 3 bay leaves 1 tsp peppercorn 5 tbsp of water (soak the annatto seeds) ½ cup vinegar 2 tbsp cooking oil 5 pcs green or red chili pepper Water for boiling Fish sauce to taste Directions: Boil the pork lungs and pork heart for 45 minutes to 1 hour or until it tender. Use pressure cooker to save time. Let it cool. Cut the lungs and heart into small cubes, must be the same cut for radish. Set aside. In separate casserole, boil again the small cubes lungs and heart with 2 cups of water. Pour the vinegar and put in the bay leaves. Let it boil for 10 to 15 minutes over a medium fire. Strain and set aside. In a pan, heat cooking oil to sauté the onion, garlic and ginger until it turns to light brown. Put in the boiled pork lungs and heart. Add radish, simmer for 3 to 5 minutes. Add water from the soak annatto seeds; stir to blend the color in the ingredients. Add the green or red chili pepper, peppercorn and fish sauce to taste. ...  Needed: 1 kilo sticky rice or glutinous rice 1 head garlic minced 3 onions minced 4 tbsp cooking oil 3 pcs red bell pepper sliced in small size ½ kilo chicken liver cut in small size 1 kilo chicken cut in small size 5 Chinese sausages sliced in small sized 1 cup chicharo or snow peas 1 cup green peas 1 cup raisin 3 pcs carrots chopped in small sized 1 bundle spring onion hopped 2 cups tomato sauce 5 tbsp water (annatto seeds soak in water) Boiled eggs for toppings sliced 2 cups water Salt and ground pepper to taste Directions: Cook the glutinous rice on the usual cook for regular rice. Set aside. In a big pan, saute the garlic and onion in cooking oil. Add the chicken and chicken liver; let it cook for 3 to 5 minutes. Put in the tomato sauce and water. Add the bell pepper, carrots, snow peas, green peas and Chinese sausage. Simmer for 3 to 5 minutes over a low heat. Pour the water from the soaked annatto seeds. Add salt and pepper to taste. Palabok Recipe (Filipino Rice Noodle Dish)

...  Needed: 1 pack bihon or rice noodles For the sauce: ¼ kilo ground pork 1 tbsp annatto seeds (soaked with 3 tbsp water) 5 tbsp cornstarch (dissolved in water) 2 pcs onions minced 1 head garlic minced 2 pcs shrimp cubes 2 tbsp patis or fish sauce 2 tbsp cooking oil Ground pepper to taste 1 cup water For the toppings: Pork chicharon or cracklings, crushed or grounded Cooked shrimps (without shell) Hard boiled eggs sliced Calamansi or lemon sliced Tinapa flakes or smoked fish Marinated fried pork sliced in small pieces Toasted garlic Directions: Soak the rice noodles for 5 to 10 minutes. After soaking, boil some water and put in the rice noodles for 2 to 3 minutes. Drain and set aside. For the sauce, heat the oil in a sauce pan. Put in the garlic and toast until it turns light brown. Remove the half toasted garlic from the oil. Set aside. In the same pan, put in the ground pork and cook for 5 to 8 minutes over a low heat. Add the toasted garlic and the onion, sauté together. Add water, shrimp cubes and the water from the soaked annatto seeds. Let it boil. Pour the diluted cornstarch and mix until it thickens. Add the fish sauce and ground pepper to taste. Remove from heat. On a serving plate, put in first the cooked bihon or rice noodles. Put the sauce on top of the noodles. Garnish and arrange the toppings over the sauce.
