Ingredients 2 acorn squash, pumpkins, or other smallish winter squash 3 tablespoons unsalted butter, room temperature 1 14-ounce can coconut milk 1 teaspoon (or more) red Thai curry paste 2 teaspoons fine grain sea salt (or to taste) water
Instructions Preheat the oven to 375 degrees and place the oven racks in the middle. Carefully cut each squash/pumpkin into halves (or quarters). Slather each piece of squash with butter, sprinkle generously with salt, place on a baking sheet skin sides down, and place in the oven. Roast for about an hour or until the squash is tender throughout. When the pumpkin/squash are cool enough to handle, scoop it into a large pot over medium high heat, add the coconut milk and curry paste and bring to a simmer. Remove from the heat and puree with a hand blender, you should have a very thick base at this point. Now add water a cup at a time pureeing between additions until the soup is the consistency you prefer - a light vegetable stock would work here as well. Bring up to a simmer again and add the salt (and more curry paste if you like)

Ingredients Needed 1 cup mung beans (munggo) 2 cups stick rice (malagkit), washed ¼ kilo brown sugar 3 cups coconut milk ½ cup water
Directions In a pan, put in the mung beans and toast until brown. Remove from heat and cool down. Using mortar and pestle crack the toasted mung beans and set aside. Heat a cooking pot. Pour the coconut milk and let it boil. Put in the sticky rice. Simmer for a minute. Add the cracked mung beans. Add water and cook over a low heat for 10 to 15 minutes. Stir occasionally. Add the sugar and stir. Cook until the coconut milk is almost absorbed. Remove from heat and serve hot or cold. Best serve with evaporated milk. Share and enjoy!

½ kilo longganisa
8 pcs red chili pepper
2 cups coconut milk
1 cup water
10 cloves garlic grated
5 tbsp cooking oil
Salt and ground pepper to taste
Directions:
Prepare the raw longganisa. Make a lengthwise slit on each longganisa. In a pan, boil the longganisa for 5 to 10 minutes. Add the cooking oil and continue cooking the longganisa until it turns to lightly brown. Remove the longganisa. Set aside.
In the same pan, reheat the combination of water and cooking oil from the cooked longganisa. Add the garlic. Put in the coconut milk and let it boil until it becomes creamy. Add the cooked longganisa and red chili pepper. Put in salt and pepper. Simmer for 3 to 5 minutes or more to bring the spicy creamy taste. Best serve with steamed rice.

1 pc medium green papaya cut into small cubes
1 can sardines, separate the sauce
2 cup coconut milk
½ cup water
2 onions sliced
5 cloves garlic minced
Salt and ground black pepper to taste
Cooking oil
Directions:
Heat the cooking oil, sauté the garlic and onion. Add the drained sardines and mash it. Put in the green papaya and simmer for 2 to 3 minutes over a low heat. Pour the coconut milk and let it boil until the papaya is soft and cooked. Add salt and pepper to taste, stir and simmer for a while. Best serve with fried fish and steamed rice.

1 kilo pork kasim cut into small cubes
5 tbsp curry powder
2 cups coconut milk
1 cups water
2 tbsp cooking oil
2 onions sliced
5 cloves garlic minced
1 bundle spring onions chopped
8 pcs red chili pepper chopped
2 tbsp soy sauce
Salt and ground black pepper to taste
Directions:
In a pan, heat the cooking oil. Saute garlic and onion, add the pork and stir fry until it turns to light brown. Add the curry powder and mix it to the pork, simmer for 3 to 5 minutes. Pour water and let it boil. Add the soy sauce, red chili pepper and spring onions. Put in the coconut milk and boil until sauce thickens and pork is tender. Add salt and pepper to taste, simmer for a minute. Remove from heat and best serve with steam rice.

2 onions sliced
5 cloves garlic chopped
5 pcs red chili pepper chopped
1 thumb ginger strips
1 cup coconut milk
3 tbsp cooking oil
4 tbsp soy sauce
3 tbsp sugar
Salt and ground pepper to taste
Directions:
Heat the cooking oil, sauté garlic, onion and ginger. Add the squid and sauté together with the spices. Simmer for 3 to 5 minutes. Put in the coconut milk and let it boil. Add the red chili pepper. Put in the soy sauce and ground pepper. To add more taste, put sugar and salt to blend the taste. Simmer for another 3 to 5 minutes. Remove from heat.
