Ingredients Needed: 1 kilo chicken cut into serving pieces 2 onions chopped 5 cloves garlic chopped 3 medium sized potatoes cut into cubes 2 medium sized carrots cut into cubes 1 thumb ginger cut into strips 2 tbsp curry powder 2 cups thick coconut milk 1 cup water 3 tbsp fish sauce 1 medium sized red bell pepper cut into cubes 1 tbsp ground pepper 1 tbsp cooking oil Directions: In a large pan, saute the garlic and onion. Put in the chicken and stir fry for 3 to 5 minutes. Add the curry powder; simmer for 2 to 3 minutes over a low fire. Add the potatoes and carrots. Pour water and let it boil for a minute. Add the thick coconut milk and boil for 5 to 10 minutes or until the ingredients are tender. Add the fish sauce, pepper and red bell pepper to taste, stir carefully. Simmer for a while.
