... Needed:
1 kilo fresh tahong or mussels cleaned
3 thumbs ginger strips
2 onions sliced
5 cloves garlic minced
1 cup pineapple juice
1 bundle pandan leaves tie a knot
½ bar butter
2 cups water
3 tbsp fish sauce
1 tsp ground black pepper
Directions:
In a casserole, boil the mussels into pineapple juice. Add the pandan leaves. Boil for 5 to 8 minutes over a low heat.
In separate pan, melt butter. Saute garlic, ginger and onion for 2 to 3 minutes. Add water, put fish sauce and pepper to taste. Boil for 3 to 5 minutes. Pour it into boiled mussels. Mix and simmer for 3 to 5 minutes. Best serve while it’s hot.

1 kilo beef ribs or buto-buto
1 bundle Chinese cabbage
3 pcs potatoes quartered
3 pcs whole sweet corn cut into 2 to 3 pcs
1 tsp whole pepper corn
2 onions sliced
1 pc beef broth cubes
8 cups of water
3 tbsp fish sauce
Directions:
In a casserole, boil the beef ribs for 25 to 30 minutes or until it tenders, remove the scum. Use pressure cooker to save time. Add the pepper corn and onion. Put in the broth cubes and simmer. Add the sweet corn and boil for 5 to 8 minutes. Add the potatoes and cabbage; boil for 3 to 5 minutes. Add fish sauce and simmer for a while. Best serve while it’s hot.

2 bunch choy sum, sliced in small pieces
2 tbsp cooking oil
1 tbsp fish sauce
¼ kilo ground pork
2 onions sliced
3 pcs tomatoes sliced
5 cloves garlic minced
½ cup of water
Salt and ground pepper to taste
Directions:
In a pan, heat the cooking oil. Stir fry the ground pork until it will turn to light brown or until it cook. Set aside.
In the same pan, sauté garlic, onion and tomatoes. Add the Choy sum and simmer for 2 to 3 minutes. Add water and let it boil for 3 to 5 minutes. Put in the ground pork and mix. Add the seasonings to taste. Simmer for a minute. ...

1 large boneless bangus(milkfish), cleaned and cut into 6 pieces
4 pcs calamansi
5 tbsp patis or fish sauce
5 cloves garlic crushed
1 cup cooking oil
1 tbsp of chili powder
Ground black pepper
Crispy Fry Breading Mix
Directions:
Put in the bangus in a flat surface container. Add the patis, garlic and squeeze the calamansi or lemon. Season with ground pepper and marinate for 25 to 30 minutes. Set aside.
Ready for coating, place the breading mix into a plate. Add the marinated bangus. Roll each bangus pieces until it coated.

½ any fresh fish, fried
¼ kilo squash cut into cubes
1 bundle okra or lady finger sliced
1 bundle of string beans sliced
1 pc small bitter melon sliced
1 pc of egg plant sliced
1 cup of malunggay (moringa) leaves
2 onions sliced
2 pcs tomatoes, sliced
3 tbsp of patis or fish sauce
2 to 3 cups water
1 pc fish broth cube
Salt to taste
Directions:
In a casserole, boil water with onion and tomatoes. Add the squash, okra, bitter melon and string beans. Simmer for a minute. Put in the egg plant and add the fish broth cube. Boil for 2 to 3 minutes. To add more taste, add fish sauce and salt. Put in the malunggay leaves and the fried fish. Simmer for a while. Remove from heat. Best serve while it’s hot.

½ kilo ground pork
5 pcs of cheese dog / hotdog sliced
20 pcs hard boiled quail eggs
1 pc medium size carrot cut into small cubes
3 pcs potatoes cut into small cubes
1 pc green bell pepper cut into small cubes
2 cups tomato sauce
1 cup water
3 tbsp cooking oil
2 onions sliced
5 cloves garlic chopped
5 tbsp of patis or fish sauce
2 tbsp brown sugar
Salt and pepper to taste
Directions:
Stir fry the ground pork without cooking oil for 3 to 5 minutes over a medium fire. Set aside.
In the same pan, add cooking oil. Sauté garlic, onion and bell pepper, put in the sliced cheese dog and stir together for 2 to 3 minutes. Add ground pork, potatoes and carrots, simmer for a while. Pour tomato sauce and water. Let it boil for 3 to 5 minutes. Add fish sauce and sugar. To add more taste put salt and pepper, mix to blend the taste. Simmer for a minute or until all the ingredients are cook. Put in the hard boiled quail eggs. Best serve with hot rice.
