... Needed:
½ kilo medium fresh shelled shrimps (set aside the head for boiling)
4 pcs large tomatoes quartered
1 onion sliced
5 cloves garlic minced
1 thumb garlic minced
2 tbsp spring onion chopped
4 pcs green chili pepper sliced
1 cup tomato sauce
1 tbsp white sugar
2 cup water
Cooking oil
Salt and ground pepper to taste
Directions:
In a pot, boil the shrimp head for 3 to 5 minutes. Drain and set aside the shrimp stock.
In a sauce pan, heat the cooking oil. Put in the garlic, ginger, onion and tomatoes until fragrant. Pour the shrimp stock and let it boil for 3 to 5 minutes. Add the tomato sauce, green chili pepper and sugar, stir. Put in the fresh shelled shrimp and spring onions. Simmer for another 3 to 5 minutes. Add salt and pepper to taste and boil for a minute. Remove from heat. Best serve while it’s hot with steamed rice.

... Needed:
1 kilo fresh tahong or mussels cleaned
3 thumbs ginger strips
2 onions sliced
5 cloves garlic minced
1 cup pineapple juice
1 bundle pandan leaves tie a knot
½ bar butter
2 cups water
3 tbsp fish sauce
1 tsp ground black pepper
Directions:
In a casserole, boil the mussels into pineapple juice. Add the pandan leaves. Boil for 5 to 8 minutes over a low heat.
In separate pan, melt butter. Saute garlic, ginger and onion for 2 to 3 minutes. Add water, put fish sauce and pepper to taste. Boil for 3 to 5 minutes. Pour it into boiled mussels. Mix and simmer for 3 to 5 minutes. Best serve while it’s hot.

... Needed:
1 cup fresh oyster meat
3 cups hot water
1 cup vinegar
1 onion sliced
5 cloves garlic grated
1 thumb ginger grated
1 cup grated unripe mango
1 pc red chili pepper
¼ cup calamansi juice or lemon juice
Salt and ground pepper to taste
Directions:
Put in the fresh oyster into a strainer. Rinse with hot water and drain.
In a bowl mix vinegar and oyster, marinate for 30 minutes to 1 hour. Drain. Set aside.
In a bowl, mix all the spices (ginger, garlic and onion). Add the calamansi juice and grated unripe mango. Add salt and ground pepper to taste. Put in the chili pepper and the oyster. Mix well.

1 kilo medium size squid, cleaned and ink separated
1 small can evaporated milk
1 thumb ginger crushed
5 cloves garlic sliced
3 onions sliced
3 pcs red chili pepper chopped
2 tbsp cooking oil
Salt and ground pepper to taste
Directions:
In a pan, heat the cooking oil. Saute onion, garlic and ginger. Put in the squid, stir fry with the spices. Simmer for 2 to 3 minutes. Pour the evaporated milk and add the red chili, let it boil over a low heat. Put in salt and pepper to taste. Simmer for 3 to 5 minutes or until milk thicken. Place into serving plate.

½ kilo galunggong (mackerel) or any small fish cleaned
2 pcs unripe green mango
2 onions sliced
5 cloves garlic crushed
1 thumb ginger crushed
½ cup water
1 tsp peppercorn
2 tbsp soy sauce
Directions:
In a pot or casserole, arrange the ingredients alternately (fish, unripe mango and fish). Add all the spices (onion, garlic and ginger) on top. Pour water; add soy sauce and peppercorn to taste. Cover the pot and cook over a low heat for 5 to 10 minutes. Let it boil until it will cook. Remove from heat. Transfer to a serving plate. Best serve with steamed rice.

1 kilo squid cleaned
2 onions sliced
5 cloves garlic chopped
5 pcs red chili pepper chopped
1 thumb ginger strips
1 cup coconut milk
3 tbsp cooking oil
4 tbsp soy sauce
3 tbsp sugar
Salt and ground pepper to taste
Directions:
Heat the cooking oil, sauté garlic, onion and ginger. Add the squid and sauté together with the spices. Simmer for 3 to 5 minutes. Put in the coconut milk and let it boil. Add the red chili pepper. Put in the soy sauce and ground pepper. To add more taste, put sugar and salt to blend the taste. Simmer for another 3 to 5 minutes. Remove from heat.
